Alexander Bunyip’s Wattle Ice-cream

One of Alexander Bunyip’s favourite foods is ice-cream. Here is a recipe that uses wattle seed. Wattle seed tastes a bit like hazelnut, coffee and chocolate all mixed into one.

Ingredients:

250 ml cream
500 ml milk
3/4 cup sugar
4 egg yolks
1 heaped tbsp wattle seed

Method:

Heat milk and sugar in a saucepan, stirring. Remove from heat when sugar has dissolved, before milk boils.
Slowly pour onto beaten egg yolks while beating quickly with a whisk.
Add the wattle seed and return the mixture to the stove over a low heat.
Stir until the mixture begins to thicken (5 to 10 mins).
Allow to stand for 15 minutes, then add the cream and mix well.
Cool and churn in an ice-cream machine.
